Orange chia puddings with chocolate mousse topping

You will love these simple, delicious chia puddings. They can be ready in less than half an hour if you have guests coming over. Or you can leave them to set in the fridge until you’re ready to enjoy them.

If you’ve never made chia pudding before, keep in mind the chia seeds need some time to set, but you can tell as you’re mixing it if you have too much liquid or if you need to add more.

If the mixture is slushing around in the bowl, go ahead and up the amount of seeds. If the mix is super thick, it’s probably better to add a bit more liquid to avoid having a very hard pudding.

Normally, chia pudding is made with plain water to soak the seeds, but here I used freshly squeezed orange juice, as well as the blended pulp, to get the delicious orange flavour in.

I added a tiny pinch of salt, but that is only because I couldn’t help myself.

The chocolate mousse topping is a cheater’s type of mousse, simply whipped cream stirred into melted chocolate.

Melting chocolate is easy enough in a bowl set over a pot of gently simmering water. If you really want to, it is possible to melt it in the microwave, just mix it every 20-30 seconds to avoid actually cooking it!

Once the puddings were set, I simply assembled them by spooning the cream mixture over the top and garnishing with some fresh orange zest, sea salt and a knob of chocolate. Voila!

I hope you try this out and come up with your own variations, I will personally be making these again to get me out of trouble when I don’t have other snacks in the fridge!

Orange chia puddings with chocolate mousse topping

Makes 4 puddings

Ingredients:

100g milk chocolate (I used Aldi’s Choceur brand)

250g freshly squeezed orange juice and blended pulp (about two oranges)

230g chia seeds

200ml Thickened cream

Dash of vanilla essence

Pinch of salt

Orange zest and extra chocolate, to garnish

Method:

  1. Combine chia seeds, salt and orange juice/pulp in a bowl until the mixture has a thick consistency that covers the back of a spoon.

  2. Pour the chia pudding into 4 tumblers and place in fridge.

  3. Melt chocolate in a bowl placed over a pot of gently simmering water, whisking occasionally.

  4. While waiting for chocolate to melt, whip the cream and vanilla until soft peaks form.

  5. Remove melted chocolate from the stovetop and add half of the cream mixture, incorporate well.

  6. Add remaining cream and pour the mixture over the set chia puddings.

  7. Store in fridge until ready to serve.

  8. Garnish with fresh orange zest, a sprinkle of sea salt and extra chocolate.
